Another expression from the highly interesting Bimber distillery, following my first review of their first release (reviewed last year by us) which was plainly excellent.
This new small-batch release is limited to 5,000 individually numbered bottles and has been crafted from a vatting of our heavily charred American oak casks laid down in 2016. The selection of American Oak casks was hand charred by Bimber’s on-site coopers to level #4 char – also known as ‘Alligator char’. The deep charring process caramelized the wood sugars and added a layer of filtering carbon to the surface of the barrel.
So, will this one be as good as the first edition? let’s find out.
Bimber Recahrred cask, 51.9%, £62.95
Nose: Sweet pastries, topped with grilled pineapple, icing sugar, and some sweet stewed orchard fruit, cinnamon powder, sultanas wildflower honey, and quite some wood, sawdust and a spicy touch, with a minty edge.
Palate: sweet and spicy nectar on the palate – with peppermint, and cinnamon gum, packing a nice spicy punch, then the sweeter notes kick in with sweet red caramelized apples, flambe bananas, caramel candy and touches of ginger.
Finish: Chocolate, cocoa, honey, sultanas, and zingy wood.
Conclusion: A very different beast than the first edition, but still lovely and very drinkable, sweet and spicy. This one’s still available.
